Creamy Wild Rice Soup with Sweet Potato Croutons

This was a delightful surprise. I had to adapt the recipe a bit to fit into our cleanse restrictions, but it still got an A from both David and me. I'll definitely be trying it again when this thing is over (2 more days!).

2 tbsp coconut oil

1-1/2 tsp red curry paste
1 large clove garlic, minced
1 shallot, chopped
1 yellow onion, chopped
1 cup wild rice
4 cups water
1 orange sweet potato, peeled and diced
sea salt
2 tsp ground turmeric
1 tbsp sugar
1 tbsp soy or shoyu sauce
1 14-oz can coconut milk
squeeze of lime juice

Heat 1 tbsp coconut oil in heavy pot over med-hi heat, then add curry paste, garlic, shallot and onion and saute for a few min. stir in the wild rice nad 3 cups of the water. Simmer, covered for about 40 min.

Sweet potato croutons: warm 1 tbsp coconut oil in skillet, then add cubed potatoes and a few pinches of salt. Cook til they are brown and crispy and set on a paper towel.

When the rice is tender, stir in turmeric, sugar, soy sauce, coconut milk, 1 cup water and 1 tsp salt. Stir, return to simmer for 5 more min.

Finish with a squeeze of lime joice, more salt if needed and sweet potato croutons.

I got this recipe from Super Natural Cooking, by Heidi Swanson.
